Quick & Easy Vegan Lunch Idea: Cauliflower Creamy Soup with Mushrooms

I love vegetables! One of my most favorite is cauliflower. It is a powerful veggie! It is high in potassium, vitamin C, vitamin B-6 and it is a great source of calcium, protein, iron and magnesium. Also, mushrooms are really healthy, high in potassium and protein so this meal is excellent for your health! I usually eat this veggies fresh and in a salad but today I decided to experiment a little bit in the kitchen and try to create something interesting for lunch. So, this is what I came up with! It is really quick, easy and simple to do and I wish you could try how awesome it tastes! If you want to recreate this, here is what I used:

1 big cauliflower head
1 onion, chopped into tiny pieces
1 pealed garlic clove, chopped
mushrooms, as many as you like
2 table spoons soy milk powder SoVita
half a cup of warm water
extra virgin olive oil
salt and pepper

First of all, after you clean the cauliflower and break it into smaller florets, you boil it until it is soft. Drain the water and let it cool a little. Next, heat the olive oil in a large pan over medium heat until shimmering. Add the chopped onion and cook it until it is soft and translucent and then add the chopped garlic. Then, you put the cauliflower, the onions and the garlic into a blender with some warm water and soy milk powder, salt and pepper and blend it until it's smooth and creamy. Fry the mushrooms until they are golden and add them over the puree.
